asparagus-and-seafood

So I came home from work and was starving.  All I wanted to do was eat something satisfying and that tasted great but didn’t want to spend almost any time making it happen.  Solution?  Pan Seared Asparagus and Seafood.  In about 10 minutes I had a meal that had a share of lean protein, veggies, and was low carb (for you crazies who are into that).  This was, again, taken from Jamie Oliver’s At Home.  You can switch out the seafood for just about anything that suits your fancy.

1/2 lb asparagus, woody ends removed
2 lemons
olive oil
1 fresh red chili, seeds removed and chopped finely
Enough seafood for 4 people (I cut this down to two and used a mix of scallops and sole)
Salt and pepper

In a large saute pan over medium heat, drizzle oil and add asparagus and chili.  Toss ocassionally.  Cook for about 6 min.  Add juice from lemons and seafood.  Cook until browned, about two to four minutes and flip.  Continue cooking until fish is flaky and scallops are tender (be careful not to overcook or they will become rubbery).  Salt and pepper to taste.  Mmmmm…seafood.
