Today is my husband’s 30th birthday.  That’s right– the big 3 – 0.  As is now custom on birthday mornings, I made him breakfast.  Today’s menu was waffles, coffee, strawberries, and bacon…oh, and Thera-flu.  He’s been a little sick.

Waffles (adapted from Better Homes & Gardens)

1 3/4 C. Flour
2 T. Sugar
1 T. Baking Powder
1 pinch Salt
1 3/4 C. Milk
1/2 C. Oil
2 eggs
1 tsp. Vanilla

Heat waffle iron (I like to use one for Belgian waffles).  Combine all ingredients in a mixing bowl.  Lightly spray the iron surface with a non-stick spray.  Place batter in individual sections of the iron.  Close and clamp the iron and allow to cook a few minutes, or until a deep golden brown.  Serve immediately.


*This recipe can easily be halved for a smaller batch.  Original recipe makes about 12 squares.
