chicken goujons with noodles

I work, you work, we all work.  Whether you’re at home working, at the office, or running around, if you’re like me you can’t seem to find enough time in the day to do everything you’d like to do (even if that’s just reading a book).  This recipe from Jamie Oliver gave me a few more minutes in my day and hopefully a few more minutes in yours.  I hope you enjoy–it was delicious!

One red chili (like a fresno), chopped
One thumb size chunk of fresh ginger, sliced thin
1 t. Chinese Five Spice
Soy sauce (just a splash)
1-2 T. Honey
1/2 of a lemon
3-4 Chicken breasts, cut into 1″ strips
1/2 lb. thin noodles

Bring water for the noodles to a boil, add the noodles and cook until directions indicate on package.  Meanwhile, heat a fry pan over med-high.  Toss the chicken with the chili, ginger, and five spice.  Cook in the pan with a little olive oil until browned on each side (just a couple of minutes).  Add the soy sauce and honey and let cook for another minute or two.  Add the noodles, toss, and squeeze the lemon over everything.  Sprinkle with Cilantro and you have a super quick and easy meal!*

*This took me about 10 minutes WITH prep.  15 if you include clean up time…Even if it takes you a minute or two more, it’s still a really quick meal!
